SFBB --- Safer Food Better Business --- is the Food Standards Agency's free food safety management pack for small food businesses in the UK. It's a practical, paper-based system that helps you comply with food hygiene regulations without needing to be a food safety expert. Who Created SFBB and Why?
SFBB was developed by the Food Standards Agency (FSA) --- the UK government body responsible for food safety and hygiene --- in partnership with local authorities and the food industry. The FSA created SFBB because they recognised a fundamental problem: UK law requires every food business to have a food safety management system based on HACCP principles, but most small business owners don't have the time, training, or resources to implement full HACCP.

Who Is SFBB For?

Daily Diary
The core daily record. Includes opening checks (fridge and freezer temperatures, cleaning verification, staff hygiene), throughout-the-day monitoring (hot-hold temperatures, cooking temperatures, delivery checks), and closing checks (final temperature readings, waste disposal, deep clean sign-off). Pre-written procedures covering the four key food safety controls: cooking (temperatures, times, probing), chilling (storage temperatures, cooling protocols), cross-contamination prevention (separation of raw and ready-to-eat, colour-coded equipment, cleaning between tasks), and cleaning (effective cleaning and disinfection methods). 4-Weekly Review
A regular review process that checks your food safety system is still working. Records of who supplies your food and what allergens are present in the products you serve. Is SFBB Mandatory?
The short answer: having a food safety management system based on HACCP principles is mandatory. SFBB itself is not the only way to satisfy this requirement --- you could implement full HACCP, or use another recognised system --- but for most small food businesses in the UK, SFBB is the expected and most practical choice. In practice, most Environmental Health Officers expect small businesses to use SFBB, and presenting a different system may raise questions about why you've deviated from the FSA's recommended approach.
If you don't have any documented food safety management system, you are not compliant with food hygiene law, and an EHO inspection will result in a low food hygiene rating or, in serious cases, enforcement action. The good news is that SFBB is free, practical, and designed to be manageable alongside running your business. There's no real barrier to getting started.
How to Get SFBB
The FSA makes SFBB available for free. You can download the complete SFBB pack as a PDF from the FSA website (food.gov.uk), or request a printed pack from your local council's environmental health department. The pack is available in multiple languages and in versions tailored to specific cuisines (Chinese, Indian, and others) and sectors (caterers, retailers, childminders, care homes).
However, the free version is paper-based --- you print the sheets, fill them in by hand, and store them in a ring binder.
