Why SFBB Matters More for Caterers

- Hot Holding --- Food held hot for service must stay above 63°C at all times. If you're serving a buffet for 3 hours, you need to log temperatures at the start, middle, and end of service. A single probe thermometer check at the beginning isn't enough.
- Chilling & Cold Storage --- Cooked food that isn't served immediately must be chilled from 63°C to below 8°C within 90 minutes (and ideally faster). This rapid chill window is where most catering safety failures happen --- food left to cool on a countertop for two hours is a hazard.
- Transporting Food --- Whether it's a hot box in the back of a van or a refrigerated vehicle, you need to log temperatures at the point of dispatch and at the point of arrival. If the journey is over 30 minutes, log the mid-journey temperature too. The SFBB pack requires transport records that a restaurant never needs to think about.
Common Catering EHO Inspection Failures
Caterers are approximately three times more likely to be inspected than restaurants because of the higher risk associated with bulk food handling, off-site preparation, and transport. The most common failures that catch caterers out during an EHO visit include:
Missing Temperature Records
By far the most frequent failure. An EHO will check that you logged hot-hold temperatures for every event, chill-down times for every batch, and transport temperatures for every delivery. Gaps in your diary are an instant red flag.
Incomplete Cleaning Schedules
A catering kitchen that's been used for 12 hours straight needs documented cleaning --- not just 'we cleaned up afterwards.' The EHO wants to see a schedule, signed and dated.
Uncalibrated Probes
If you can't show that your temperature probe was calibrated within the last month, none of your temperature readings are considered reliable. Calibration records are essential.
Missing 4-Weekly Reviews
The FSA requires a management review at least every four weeks. Caterers who work event-to-event often let these slip, and it's one of the first things an EHO checks in your SFBB folder.
No Transport Records

All cooked food must reach a core temperature of 75°C (or equivalent time/temperature combination). Probe the thickest part of the largest piece in every batch.
Chill-Down Window: 90 Minutes
Cooked food not served immediately must be chilled from 63°C to below 8°C within 90 minutes. Use blast chillers or ice baths for large batches. Log start and end temperatures.
Cleaning Schedules for Catering Kitchens
