If you prepare, cook, or handle open food — you need Level 2. This covers the vast majority of kitchen staff in the UK: chefs, cooks, kitchen assistants, food prep workers, bakers, butchers, and anyone who handles high-risk foods like raw meat, dairy, or ready-to-eat products.
During an EHO inspection, one of the first things they ask for is evidence that your staff are trained. A Level 2 certificate from an accredited provider is the industry-standard way to prove that. Without it, your food hygiene rating score drops under the "confidence in management" section — and this section alone can take you from a 5 to a 3.
If your staff only handle wrapped or low-risk foods (e.g. front-of-house, bar staff), a Level 1 certificate is sufficient. If you're a manager or business owner, you need Level 3.
Level 2 Food Hygiene courses cost between £15 and £25 per person online. Bulk discounts are standard — expect £10-£15 per person for 10+ staff. The price is consistent across most providers because the syllabus is standardised by the accrediting bodies (CIEH, RSPH, Highfield).
What you get: 3-4 hours of online training (self-paced), end-of-course multiple-choice assessment (usually 30 questions, 70% to pass), and a PDF certificate issued immediately upon passing. Most providers also send a physical certificate by post (included in the price). The certificate is valid for 3 years — after that, a refresher course is recommended but not legally required.
Beware of ultra-cheap courses (£5-£10). If a course is not accredited by CIEH, RSPH, or Highfield, your certificate may not be accepted by an EHO. Always check for the accreditation logo before purchasing. An unaccredited certificate is worse than no certificate — it shows you tried to cut corners.
Your Level 2 certificate proves your staff know the theory. But theory without daily practice means nothing to an EHO. They want to see evidence: completed temperature logs, signed-off cleaning schedules, and the 4-weekly review that proves your system is working.
