How to Get a 5-Star Food Hygiene Rating

A 5-star rating is not about having the newest kitchen. It is about having a working food safety system and being able to prove it. Here is exactly what you need to do.

The scoring system

What each rating actually means

Your final rating is the lowest of your three area scores. You could score 5 on food hygiene and structural, but if your confidence in management scores 3, your overall rating is 3. This is why records matter so much.

5: Very good

Full compliance with food safety law. Your system works, your records prove it, your premises are in excellent condition.

4: Good

High standard but minor improvements needed. Often a missing signature or a single out-of-range temperature without a corrective action note.

3: Generally satisfactory

Some non-compliance found. Missing records, structural issues, or no evidence of staff training. This is the most common rating drop: a 5 to a 3 because of paperwork gaps.

2: Improvement necessary

Significant issues. Multiple record gaps, poor hygiene practices, structural problems.

1: Major improvement necessary

Serious risk to public health. Immediate action required.

0: Urgent improvement necessary

Imminent risk. Business may be closed.

How to get a 5

Specific actions for each scoring area

Food Hygiene (5): All temperatures logged and within range. Corrective actions recorded. Raw and cooked separated. Colour-coded equipment in use. Allergen information accurate and accessible. Staff demonstrate good hygiene practices when observed.

Structural (5): Premises clean and in good repair. Pest-proofing intact. Separate handwash basin with soap, hot water, towels. Adequate ventilation. Waste managed properly. No structural issues noted.
